It's called Blueberry Salad, but I used strawberries instead since they are in season!
Blueberry Salad
(from our church cookbook, DeAnn Winter)
Lettuce ( I used spinach)
Monterey Jack cheese, cubed
1/4 cup pecans, toasted
1 cup blueberries (or strawberries)
red onion, diced to taste
red pepper, diced to taste ( I left this out)
Dressing:
1 small onion, minced (can use dried onion)
1 1/2 cup sugar
2/3 cup balsamic vinegar
2 tsp. dry mustard
1 1/2 tsp. salt
2 cups oil
2-3 TBSP poppy seeds
Wash and drain lettuce. Place in a large salad bowl. In a blender, puree dressing ingredients. This will make a LARGE amount. Sprinkle cheese, pecans, berries and red onion and pepper over lettuce. Drizzle with dressing, toss and serve!
It makes a serious amount of dressing, so just know that :)
But it's soooo good. YUM!!
YUM!!! I have a salad that is very similar that's a favorite of mine except mine has mozzarella cheese and sugar coated almonds.
ReplyDeleteI really hope that I rediscover my love for salads after the girls come...the smell of lettuce has just been revolting! So weird! But this sounds really good.
